Pear and Ginger Muffins!

Hi Guys,

I used to make these Pear and Ginger Muffins, from Nigella, all the time a few years ago, I loved them! So when the theme of a recipe came up, I knew I had to bake some of these. They're perfect for this time of year and I already want to bake even more!
Now unfortunately I got very large muffin cups and I also have a very dodgy oven to go with it, so they don't look all that great on my reindeer stand, but they do taste great I promise!
You Will Need:
250g Plain Flour
150g Caster Sugar
75g Light Brown Sugar (1/2 a spoon to sprinkle too!)
2 Teaspoons Baking Powder
1 Teaspoon Ground Ginger
2 Eggs
142ml Sour Cream
1 Tablespoon Honey
150ml Cooking Oil
300g Pears (Cored, peeled and diced into around 5mm chunks)
1: Pre heat your oven to 200C/ Gas Mark 6.
2: Add your flour, caster sugar, light brown sugar, baking powder and ground ginger into a bowl and mix together.
3: In a measuring jug, add your sour cream, oil, eggs and honey, then whisk together before adding to the dry ingredients, fold them together.
4: Mix in the pear to the mixture and separate into your muffin cases, sprinkle the light brown sugar over the top.
5: Pop them in the oven for 20 minutes, once done place on a cooling rack to cool. They're best eaten when they're warm.
I hope you love these as much as I do if you bake them. If you do let me know! I'd love to see them, hopefully you won't have a dodgy oven and they'll turn out better than mine too!
